He was first published
in 1989 by Pyramid (an imprint of the Octopus
Publishing Group) with Great
British Chefs,
a study of the state of gastronomy in the UK
with profiles and recipes of some of Britain's
greatest contemporary chefs, including Francis
Coulson, John Tovey, Joyce Molyneux, Shaun
Hill, Alastair Little, Simon Hopkinson and
Gary Rhodes. The book was shortlisted for the
1990 André Simon Book Award and it was republished
in paperback in 1994.

The second volume
of Great British Chefs was published in 1995
by Mitchell Beazley and reprinted in 1996 and
1997. This continued the story of Britain's
gastronomic development and featured a new
collection of great chefs, including Rose Gray,
Sally Clarke, Rowley Leigh, Rick Stein and
Paul Rankin. In 1996, Great
British Chefs 2 won the Guild of Food Writers' Michael Smith
Award.

by Weidenfeld & Nicholson
in 1999, followed by the paperback edition
(Orion) in the same year. The book is an amusing
and waspish account of a year in his life at
The Castle.
